The Vrignaud family has been settled in the village of Fontenay-pres-Chablis for five generations. The winery is currently in the more-than-capable hands of Guillaume Vignaud, whose grandfather, Georges Deschamps, began planting the first vines here in 1955. This 70-acre domaine is one of only a handful of family estates to produce organic wine in Chablis, with 2009 marking the start of organic certification here. Guillaume aims to produce wines that reflect both their origin and climate; as a result, intervention in the cellar is very low and winemaking is often a slow process that respects the personality of the wine and the vintage. This is a beautifully fresh Chablis from the cool, steep slopes of Fontenay in the north of Chablis; it is marked by notes of green apple and citrus, alongside the white flower and nectarine notes often found in wines from here.
