Fernet-Vallet dates back to 1882, when Henri Vallet, a French entrepreneur, moved to Mexico after Maximilian was named emperor bringing the recipe and technique for this French bitters with him. Even though Maximilian met a rather inglorious demise, Vallet remained and his bitters became an integral part of Mexican bar culture. They were actually made in downtown Mexico City until the early 2000s when a government revitalization program pushed them out of town to Hidalgo, where it’s made to this day, still according to the original recipe. Even with that long history of continuous production in Mexico, this fernet (a type of amaro) has been available in the U.S. market only since 2010. Made from a maceration of aromatic plants, roots, and spices, it is intensely herbal and woody, with just a touch of sweetness.
