This venerable estate in Serralunga f’Alba dates from 1870, when Filippo Cappellano amassed substantial acreage there and started the winery. Today it is in the hands of Augusto Cappellano, representing the fifth generation to make wine from these vineyards. The ten acres of vineayrds owned by the family are principally in Serralunga d’Alba and are supplemented by a small parcel in the neighboring village of Novello from which Cappellano produces his Nebiolo d’Alba (how the family has always spelled it, with one “b”). Chinato is a specialty of the Piedmont region. A base wine, in this case a 2017 Barolo, is fortified, then infused with herbs and spices (mainly quinine) and aged in stainless steel. Used as a digestivo or as an ingredient in a high-end cocktail, it is only mildly sweet with a distinct bitter edge on the palate.
