Suntory was founded in 1923 by Shinjiro Torii, who was inspired by traditional Scottish whisky and whose aim was to create a whisky that would suit the palate of the Japanese and enhance their dining experience. Today third-generation Master Blender Shingo Torii continues the pursuit of his family legacy, with operations at three state-of-the-art distilleries, one at Hakushu, one at Yamazaki, and one at Chita. Toki is a blend of non-age-statement malt and grain whiskies from all three distilleries. Unlike their previous expressions that focused on malt from Yamazaki as the key component, this one highlights Hakushu malt aged in American oak and balances that with grain whisky from Chita distillery. The blend is completed by adding single malts from Yamazaki that have aged in American and Spanish oak. The nose offers notes of basil, green apple, and honey, while there is citrus, green grapes and peppermint on the palate. The finish is subtly sweet and spicy with hints of ginger, white pepper and oak.
