Little about López de Heredia has changed in the 125 years since its founding. The family adheres to a winemaking doctrine blueprinted in the 1880’s — to make wine only from their own vineyards, using natural yeasts, long aging in wood, and no filtration at bottling. The Cubillo is a slightly different blend from the standard, being 65% Tempranillo and 25% Garnacha, with the rest Mazuelo and Graciano; this is Lopez de Heredia's entry-level red, a super-dry, lighter styled red that has good fruit but an equal amount of scorched earth, tar and licorice components.
