Last Light Wine Company is a partnership between two young Paso Robles winemakers, Jared Lee and David Sartain; they are Burgundians at heart, committed to making wine only from Chardonnay and Pinot Noir, and their first vintage was 2011. They chose the name of the winery as a nod to the extreme coastal vineyards that capture the last light before the sun sinks away. They are currently working with only two vineyards, Spanish Springs and Derbyshire, Derbyshire being the most coastal in all of central California if not the entire state.The Pinot Noir is from the Derbyshire vineyard; with just the slightest hint of raspberry and cranberry on the nose, it has loads of tingly acidity on the palate, along with flavors of tobacco, oregano, and barely ripe cherry tomato.
