Gabernik 23 is a small family-owned winery in Štajerska, Slovenia. Janko Bogatic has been at the helm here for nearly 30 years, having had to take over the vineyards when he was 18 and his father passed away suddenly. Today Janko farms some 23 acres of vineyards on the slopes around Ritoznoj in the foothills of the Pohorje range. While some of the grapes are sold to another local winemaker, Janko began bottling his own wines under the Gabernik 23 label in 2018. Winemaker Nicholas Gee specializes in something that is a serious local tradition, the “pikola” (or piquette), a low-alcohol wine that is seen as the perfect post-harvest drink. This white version is effectively a by-product of making the winery’s white blend, which currently uses Riesling, Yellow Muscat, Rizvanec, and Muskat Ottonel. Nick added some water to the pressed grape skins, let it referment, then added half of that to unfermented juice which continued to ferment after being bottled. The result is a fresh, charming, lightly sparkling wine that comes in at a modest 7% alcohol.
