Neversink Apple Aperitif
NeverSink Spirits was founded by two longtime friends, Noah Braunstein and Yoni Rabino, who share a passion for spirits, wine, food, and nature. Their venture began a few years back when they formed a partnership with Camps Road Farm and Kent Falls Brewery in rural Connecticut to form a local collective known as “The Food Cycle.” With the help of volunteers and friends, in 2012 they planted more than 350 apple trees on the farm, and these trees provide the apples that are the basis of their spirits. Based in Port Chester New York, the company launched its initial line of spirits in 2015. The latest product in their lineup, this Apple Aperitif is a blend of one-year-old house-distilled apple brandy with bittersweet cider pressed from heirloom apples, then aged eighteen months in neutral French oak wine barrels; it’s delicious for sipping, lightly chilled, or in a spritz.
