George Dickel had built a reputation for selling the smoothest, most mellow spirits in the region, so when the Cascade Hollow Distillery opened in 1878 in Coffee County Tennessee, Dickel bought a large share of the business. Prohibition put the distillery out of business, but the then-named Cascade Whisky was allowed to be sold as a medicinal spirit through leased equipment at the Stitzel-Weller distillery in Kentucky. Twenty-five years after repeal, in 1958, a new distillery was opened down the road from the old Cascade Hollow Distillery and began producing George A. Dickel Tennessee Whisky. Dickel is today owned by drinks behemoth Diageo. The Dickel Rye is actually distilled in Lawrenceburg Indiana by Midwest Grain Products but then charcoal-filtered and bottled by Dickel; it has a warm dill and spice nose and is warm on the palate, with light fruit, baking spices, and a smooth, mild texture.
