Co-founder with Steve Hindy of the Brooklyn Brewery, Tom Potter went on in 2008 to start the New York Distilling Company, in partnership with his son Bill and distilling expert Alan Katz. Their debut efforts, the “Dorothy Parker” gin and the “Perry’s Tot” gin, met with great success. The Jaywalk ryes take the trio even deeper into the process, for here they are not only making the whiskey but actually growing the grain from which it is made. Some years back, in collaboration with Cornell University, they rediscovered Horton rye, a 17th century variety native to New York. Having acquired a mere ten seeds, they set out to bring the heirloom grain back to life. It took five years of harvesting and replanting just to have enough grain to begin distillation, but today they have 200 acres in perpetual crop rotation in the Finger Lakes Region of New York. This straight rye blends the Horton with their Field Race Rye, which they also grow I upstate New York, and it blends six-, seven-, and eight-year-old spirits as well. Tropical fruits abound on the nose and palate, and there are dark caramelized sugar notes as well.
