Onetime film and TV producer Daniel de la Nuez got interested in distilling a few years ago, inspired by a friend of his who was already “doing it himself.” De la Nuez launched his project, Forthave, in January of 2017 in the Pfizer building on the border between Bed-Stuy and Williamsburg in Brooklyn. He is currently producing three spirits: Blue, an American-style dry gin; an amaro called Marseille; and this aperitivo, Red, in which de la Nuez takes on the likes of Campari. Red starts with a base of sugar cane distillate and is inflused with 13 different botanicals. It explodes on the nose with notes of orange, plum, chamomile, rose, grapefruit rind, cardamom, cinnamon and saffron, and the palate is viscous with a pleasant bitterness and balanced sweetness.
