The Gilles Brisson estate has been family-owned and -run for four generations. Located in Châteaubernard, in the heart of the Grande Champagne appellation, two miles from the city of Cognac, the estate owns 165 acres in total, some 63 of which are planted to Ugni-Blanc for Cognac production. Cyril Brisson has run the estate since 1989, now ably assisted by his sons Alexis and Loan who will keep and follow the family tradition. Pineau des Charentes is a fortified wine made from either fresh, unfermented grape juice or a blend of lightly fermented grape must to which Cognac is added and then the bottling matured . . . and virtually every Champagne house produces its own version. Typically, the Giles Bresson version is a blend of 40% Colombard, 40% Folle Blanche, and 20% Sémillon juice combined with young Cognac and then aged for 18 months in oak barrels; soft and silky on the palate with hints of fresh flowers, this is, as most French folk will tell you, the perfect aperitif.6
