Hillhamn Salome founded Flor de Luna, the first micro-distillery and first 100% women-run distillery in Mexico City, in 2016. Xila Liqueur is Hillhamn's creation and, for now, the distillery's only product. Her original concept for Xila was based on three principal ingredients, ancho chile, pineapple, and mezcal. Finding something lacking with just those three, she kept trying with different ingredients, keeping mezcal (agave espadin) as the base, until she came up with the five additional ones that make up the "7 notas": hibiscus, lavender, cinnamon, cloves, and black pepper. A complex liqueur with a flavor profile that is both sweet and savory, Xila is coming to be known as "the Mexican aperitif."
