Drumshanbo is a small town in the heart of County Leitrim, Ireland; here, in a shed at the edge of a lake, we find the laboratory of P. J. Rigney, a three-decade drinks industry executive who has been called a “boundary-pushing begetter of hand-made spirits.” Rigney slow-distills his gin with a panoply of Oriental botanicals, including cardamom, star anise, kaffit lime, caraway seed, and yes, Chinese gunpowder green tea. The result is a bold, spiced, flavorful gin with a long finish.
