Black currants had been banned in this country since 1911 because the bushes carried a fungus that affected white pies. In 1999, Greg Quinn, a Hudson Valley farmer, botanist and lover of the small dark berries, dug in and with others re-examined the ban, taking into account resistant varieties, and persuaded the New York State Legislature to overturn its ban in 2003. His neighbor in Greene County, Rachael Petach, embraced the opportunity to make her own version of cassis, and this is it. Tangy and bittersweet, with just a touch of honey to sweeten it, it is infused with cardamom, bay leaf, lemon verbena and citrus rind.
