This is an artisanal grappa from a true artist. Gianni Capovilla, who sources the highest quality ingredients and makes his distillates in small bstches. He uses bain-marie alembic stills at low temperatures, which makes for a much longer production time than for the average grappa. This version is produced from Merlot and Cabernet pomaces sourced from the region around Vicenza. Bassano is considered the birthplace of grappa, and this is the only grappa permitted to use the town name as all four of the wineries in Bassano work exclusively with Capovilla. There is a fine textural weave in this spirit, a weave that is anticipated by the aromas, which play off of and build on each other.
