One-time sommelier Eric Bordelet took over the family property, Chateau de Hauteville, in 1992; since then, he has worked steadily to bring the family’s orchards into conformity with biodynamic agricultural practices. His efforts have put him among the top cider producers in Normandy. The Bordelet property has more than thirty heirloom varieties of apples and pears on trees that are up to three hundred years old, which contributes to the complexity and sophistication of their ciders. Bordelet produces two pear-based ciders, Poire Granit, and this one, the Poire Authentiques. Made from 15 different pear varieties, this is an off-dry cider whose slight sweetness is perfectly balanced by the fruit’s high acidity; fresh and lively, it ends with a drying, almost tannic finish.
