In 2014 Peter Yi, the owner and guiding spirit behind PJ Wines in Manhattan, took a break from tasting wines in the Basque country to visit a sagardotegi, a cidery. It was one of those epic transformative experiences. Back in New York, Peter committed to starting a cider house here; he sold the store and convinced his sister Susan to quit her teaching job and join him. They embarked on a crash course to learn everything they could about apples, orchards, and cider; revitalized a Hudson Valley orchard; and built a cidery, tasting room, farm store, and pavilion on the property in New Paltz; and quickly put their award-winning natural ciders on the national gastronomic map. “Half Sour,” which is carbonated, is made from a combination of traditional apples like Macintosh and heirloom varieties like Dabinett; it is off-dry, with aromas of pickled pears and honey.
