Bojan Kobal grew up among the vineyards of Slovenia, so taking a degree in oenology was a natural for him. After working for a decade as head oenologist at the oldest wine cellar in the country and then several years working as part of Angela Muir’s team of Australian and New Zealand winemakers in Slovenia, Kobal set out on his own. Kobal produces both a still and sparkling version of Muscat as well as Chardonnay, Pinot Grigio, a white blend called Halozan, Furmint, and Blaufrankisch. Kobal makes pet nat versions of several grapes, a pet nat being a natural sparkling wine bottled during the primary fermentation process. This is a pet nat made from Yellow Muskat, a super-aromatic local varietal; lively and juicy on the palate, it has aromas of citrus and white flowers with a pronouncedly yeasty note.
