Among the founding estates of Washington's Walla Walla Valley, Seven Hills effectively dates from 1980, when Casey McClellan, a fourth-generation farmer in eastern Washington, and his family planted the founding blocks of their future winery, 21 acres of Merlot and Cabernet Sauvignon. Eight years later, the McClellans established Seven Hills Winery. Today the winery's focus remains on those red wine grapes, especially on Cabernet. This bottling is a prime example of Walla Walla Cabernet, sleek and lean, with aromas and flavors of black cherries and red raspberries and hints of fresh herbs, a lush texture, and firm tannins.
