Salvatore Marino, a fifth-generation winemaker, started his small winery in Pachino, in the southeastern corner of Sicily, in 2017. Marino farms his vineyard biodynamically and takes a noninterventionist approach in the cellar, crafting artisanal wines with plenty of character. A man of many talents, Marino also produces artisanal semolina pasta from his own wheat, without the use of chemical products. His white, made 100% from Catarratto, is actually an "orange" wine, with the juice left on the skins for five days; light and relatively low in alcohol (11.5%), it has notes of white flowers, Mediterranean herbs, citrus, and ripe peaches.
