Xavier Weisskopf founded Le Rocher des Violettes in 2005 after studying winemaking in Chablis and Beaune and earning his degree in viticulture and oenology. He first worked for Lous Barruol at famed Gigondas producer Chateau de Saint Cosme, where he quickly rose to the rank of chef du cave, making four vintages during his tenure, but his love for Chenin Blanc drew him to Montlouis, where an underappreciation of this historic appellation enabled him to acquire 22 acres of old vine sites (mostly planted before WWII). His goal is to make wines of clarity, focus, and laser-like precision, and his success in achieving that is borne out in this bottling. This Chenin, labled simply “Vin de France,” is from declassified Montlouis vines that are more than sixty years old; done entirely in stainless steel, it is classic Chenin, with aromas and flavors of flowers, lemon, and honey.
