In 1982 Sir Peter Michael established the Peter Michael winery on a square mile of rocky volcanic ridges that form the western face of Mount St. Helena in Sonoma County. Since then he has been crafting excellent wines with a winemaking philosophy modeled on the French tradition infused with a few modern influences. His wines are elegant, complex and refined rather than overstated and over-extracted. Les Pavots is a 64-acre vineyard located high above Knights Valley in Sonoma County; it ascends to an elevation of 1400 feet on the west side of Mount St. Helena, and it is this vineyard that provides the grapes for the winery’s flagship red. A Bordeaux-style blend of Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, it is full-bodied and elegant, with a sophisticated bouquet of leather, mushrooms, and black fruit and a palate that is dense and round with supple tannins and subtle mineral notes leading to a long finish.
