Mattia Montanari launched Opera 02 in 2002 (hence the name) in the rolling hills of Levizzano Rangone, not far from Modena. Today Opera02 is many things: it is a resort, a restaurant, a vinegar production facility, and yes, more than a hundred acres of vineyard and a winery. The entirety of opera02 is a sustainable facility, powered entirely by the use of only green energy. The vineyards are planted largely to Lambrusca Grasparossa for the production of Lambrusco. This Brut blends the Grasparossa with another clone of the grape, Lambrusco Salamino; darker-hued than many versions of the grape, it has fine bubbles and notes of plums, raspberries, and cherries.
