DoReMi is a winery in Kartli, Georgia (the country, not the state) started in 2014 by two wine-loving friends, Georgi and Mamuka. Their aim from the start was to create the finest organic wines using ancient Georgian techniques and indigenous varietals grown in biodynamic vineyards in different parts of the country. All the wines are made with wild yeast and free from any additives, and most of them are fermented with skins and aged in qvevris, the traditional clay pots used in Georgia. Ocho is a new line of wines from this team, named for the figure in Georgian mythology who is considered the protector of forests and wild animals. This wine, playfully named Who ru?, is made in qvevris using a grape called Mtsvane, considered one of the leading grape varieties of the Kartli region; an orange wine that spent a month on the skins, it has citrus aromas, a rich and harmonious body with a firm and tannic structure, and a long finish.
