Named for a noted 18th-19th-Century writer and translator, this Cremant de Bourgogne is produced by Nuiton-Beaunoy, a cooperative based in Beaune and formerly known as Cave des Hautes-Cotes. Begun in 1957 by a group of ten or so wine growers in the Hautes-Cotes de Beaune area, the co-op today numbers 80 members, all devoted to sustaining the region and the quality of its wines. This Crémant is made from fruit from 40-year-old Burgundy vines, done in stainless steel to preserve the vibrancy of the fruit and aged on the lees for 20 months. It offers crisp, fruity notes of orange zest and apple with a creamy mousse, balancing acidity, and a dry aftertaste.
