The Koi winery, located in Valsamoggia, in the province of Bologna, was founded in 2018 by Flavio Restani who had decided, after having worked for several major Lambrusco producers, that it was time to set out on his own. In naming his winery he turned to Japanese culture, where the carp (koi) is the symbol of perseverance and nonconformity. Today Flavio farms about ten acres of certified organic vineyards with an age range of 30 to 50 years. His is a dry, frothy and fruity red made from Lambrusca Grasparossa, done with a very short maceration to tame the astringent tannins of the grape and refermented in the bottle; the result is a delicious fruit-driven Lambrusco with great complexity on both the nose and the palate. And the name "Lambroosklyn"? It's a nod to the places the winemaker deems as having the best pizza in the world: Italy and Brooklyn.
