The Kapistoni Winery (“Kapistoni” in Georgian means “good wine”) is located in the village of Saguramo in the Mtskheta region of eastern Gworgia. The Chochishvili family has been making wine here for seven generations, following traditional Georgian methods, including the use of qvevri, huge clay vessels buried in the ground for the fermentation and storage of wine, and using only grape varieties that are indigenous to the country. The Chochishvilis firmly believe that the best Georgian wines are the ones that stay true to the character that helped define them to a worldwide audience. This wine, for example, is made entirely from a very rare white grape called Mukhamtsvane, which characteristically produces full-bodied, waxy, spicy wines with yellow peach and lemon fruit notes. The Kapistoni version also offers sleek tannins and a long, flavorful finish. Bottled unfined and unfiltered.
