Third generation vigneron Johannes Zillinger farms 45 acres of vines in the region of Niederosterreich, about an hour northeast of Vienna and very close to the border with Slovakia. Johannes inherited his cellars from his father in 2913, with the vineyards having been certified organic since 1984. Though his vineyards lay firmly in Austria’s largest DAC, Weinviertel, famous for its peppery and youthful Grüner Veltliners, Zillinger chooses not to use that appellation because he farms biodynamically and because his winemaking style is in many ways a significant departure for the region (foot-treading the grapes, for example, and bottlling unfined and unfiltered). His Velue line is named both for the old name of his village, Velm-Goetzendorf, and for the local willow trees. This Gruner is done in a combination of stainless steel, large old oak barrels, and clay amphorae; richly textured, it is refreshing yet complex, with a flavor profile that features apples and herbs and an intense underlying minerality.
