Edouard Lepesme built his career in marketing for negociants in Burgundy and Champagne. In 2011 he decided to follow his dream and immersed himself in winemaking and viticulture, studying with some of the great names in France and abroad. In 2014 he purchased 33 acres in the Cote d’Auxerre from Andre Donat, whose father was a pioneer vigneron in the area in the 1960s. The Cotes d’Auxerre neighbors Chablis, and the soils here are of the same chalky limestone that is found in Chablis. Here Edouard farms Chardonnay, Pinot Noir, Gamay, Aligote, and Cesar, an old Burgundian variety grown only in this area. Edouard makes two sparkling wines, both blends of Pinot Noir and Chardonnay; this is his “Zero Dosage,” made without the addition of the mixture of reserve wine and pure cane sugar usually added before the final bottling. It is racy and refreshing, but with great depth and length.
