Sean Capiaux founded Capiaux Cellars in Sonoma in 1994, having previously gained impressive winemaking experience both in the U.S. and abroad, including stints at Jorden, Peter Michael, and Pine Ridge, Houghton Winery in Australia, and Macari, Jamesport and Schneider in Long Island. In 2000, Betty O’Shaughnessy recruited Sean for her new O’Shaughnessy Estate Winery, a producer of napa cabernet, where he remains today as president and winemaker, while continuing to produce his Capiaux Cellars Pinot Noir. Sean sources fruit on a long-term basis from various sites, including Garys’, Pisoni, Wilson, Widdoes, and Starscape Vineyards . All wines are naturally fermented, unrefined and unfiltered, with minimal use of new oak to preserve innate flavors and aromas. All of Sean’s bottlings are single-vineyard Pinots, with the exception of this “Chimera,” which combines fruit from seven vineyards along the Russian River Valley, Sonoma Coast, and Santa Lucia Highlands. A highly nuanced Pinot, “Chimera” is rich and heady, bold and generous, with intense aromas and flavors of dark cherries, plums, rose petals, and blood orange.
