COS is an acronym for the surnames of the three founders of the winery, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. They became the youngest winemakers in Italy when they bought Joseph Cilia’s old family winery in 1980. Strano withdrew from the group to pursue a career in medicine, but the other two remain fast friends and successful partners, having greatly expanded their property in and around Vittoria in the southeastern part of Sicily. COS is today recognized as a benchmark producer in the Vittoria region of southeastern Sicily and one of the most influential producers on all of the island. Frappato is considered by many to be Sicily’s answer to cru Beaujolais, and the COS version of the grape is light, bright, and floral, with aromas of wildflowers and spices and flavors of raspberries and orange peel with sweet spices on the palate.
