Bodega Maires is a small family-owned and –run winery located about six miles outside the town of Toro. It was started only in 2015, the project of cousins Fernando and Pablo, representing the fourth generation of their families as winegrowers. Their vineyards, all planted to Tinto de Toro (Tempranillo) are located throughout the Toro region, and some of the vines are more than a hundred years old. The Spanish word “Ademan” translates as “gesture with the hands” (note the label), and the different gestures represented on each of their four wines signify the different stages in a person’s life. Carabizal, their Roble, aged for only four months in oak, is all about youth: fresh and broad on the palate, it is filled with aromas and flavors of wild berries and sweet spices.
