Known as “the spirit of Chihuahua,” sotol is a mezcal-like spirit made not from agave but from the sotol plant (also known as desert spoon) that grows abundantly in this part of northern Mexico. Sotol grows wild between 3,000 and 6,500 feet elevation and thrives in the harshest of climates, often enduring below-freezing temperatures in the winter and wildfires in the summer. The spirit it produces is classically herbal and floral in character, with a juniper flavor profile much like that of London dry gin. This version from Por Siempre is made by Jacob Jacquez, a sixth-generation sotol distiller who learned the art of sotol production from his father. The process is very similar to that of mezcal production, including the use of double distillation; the result is a spirit with notes of black pepper spice, earth, mineral, and wet stone with a long and mildly smoky finish.
