Pirassununga is Brazil’s leading producer of Cachaça and is the second largest selling spirit in the world. Cachaça is a cane neutral spirit that is distilled directly from fermented sugar cane juice. 51 Cachaça is made from the finest varieties of cane crop harvested at the peak of sugar content from the heartland of the plantation area of Brazil. It has been made since 1543 when the process was developed at one of the first sugar cane mills near the port of Santos, Sao Paulo, by Erasmus Scheltz, a Swiss immigrant.
