Kentucky is synonymous with two things: bourbon and horse racing. Fittingly, then, one of the prominent players on the bourbon scene is called Pinhook Bourbon, the brainchild of Sean Josephs, proprietor of the late lamented Char #4 here in Brooklyn, who founded he brand in 2018, in association with Jay Peterson and Charles Fulford; they now operate as the CJS Beverage Corporation, working with the Castle and Key Distillery, but Josephs continues doing the blending and directing the distillery in the distillation of all Pinhook products. For the uninitiated and curious: pinhooking is an old Southern term for the shrewd purchase of very young thoroughbreds. The best pinhookers are brilliant speculators, with powerful gut instincts honed by experience and a deep knowledge of lineage. Each year, Pinhook releases a bourbon and a rye, each under three different labels – straight, high proof, and single barrel – and names them after promising young racing thoroughbreds. The 2022 release is named Bourbondiini, after a colt that was foaled May 13, 2019, bred in Kentucky, and as noted on the bottle’s label is 16.1 hands tall. This is a three-year-old bourbon intended for everyday drinking; it showcases a nose bursting with fresh fig, apple cider, marzipan, and clove, leading to a rich palate of dried papaya, coffee, cinnamon, and burnt caramel.
