Italy’s premier family liqueur producer, Luxardo was founded in 1821 in Zara, a port city on the Dalmatian coast. Founder Girolomo Luxardo, a businessman from Genoa, had moved to Zara with his wife Maria Canevan, who was interest in perfecting a “rosalio maraschino,” a liqueur produced in Dalmatia since medieval times. Her success was such that her husband opened a distillery to produce the liqueur.This dry, peppery liqueur is made by distilling Marasca, a sour cherry especially cultivated by the firm of Luxardo. Aged two years in Finnish ash vats, it has sweet aromas and flavors of juicy cherry and pistachio along with notes of nuts and candied violets. Though traditionally enjoyed on its own, Maraschino is increasingly used as an ingredient in modern riffs on Prohibition-era cocktails.
