Onetime film and TV producer Daniel de la Nuez got interested in distilling a few years ago, inspired by a friend of his, Aaron Fox, who was already “doing it himself.” They launched their project, Forthave, in January of 2017 in the Pfizer building on the border between Bed-Stuy and Williamsburg in Brooklyn. Starting with three spirits− Red, an aperitivo, an amaro called Marseilles, and Blue, an American dry gin – they have since added several other items, including a nocino, a coffee liqueur, and this bittersweet liqueur, a new entry in the distillery’s Single Batch Series, which features one-off projects that are often several years in development. For FOUR, the Forthave team started with an eau de vie of genepi flowers, later adding eau de vies from lavender, cherry blossoms, elderflowers, chamomile, rose petals and more, many of them local. The final touches: bitter gentian root, grape must, and raw cane sugar for balance. This is, then, a liqueur like no other, a refreshing partner for soda water or sparkling wine.
