Bovina Spirits is the brainchild of Brooklyn-based commercial film director Jake Sherry and his buddy Sam Blackman, who are making this gin one batch at a time in a barn in the town of Bovina in the western Catskills. The two, along with their wives Catherine Sherry and Imogen Blackman, had been fantasizing for some time about developing a small-batch gin using mostly local ingredients, but when the Sherrys decamped to their second home for lockdown for Covid, the project moved from thinking to doing, hence the name “Isolation Proof.” This is a heady, woodsy gin with a spicy kick: it is flavored with juniper, of course, but also coriander, cassia bark, angelica root, licorice root, orange peel, and cubeb, an Indonesian spice in the pepper family that gives the blend a peppery kick.
