Established in the Edo period, the Kitagawa Honke brewery in Kyoto has a recorded history that dates back to 1657. Kitagawa Honke’s flagship sake today is called Tomio, a name taken from and inspired by the Nine Chinese Classic Texts that signifies "those who are rich in spirit will enjoy a long, happy life." Since 1983, when the company first put Tomio forward at the annual Japan Sake Awards, it has won 15 gold awards. This “All Kyoto” sake is what it says it is: it is a single-pasteurized Junmai Ginjyo brewed using all Kyoto components. including Kyoto prefecture-cultivated Gohyakumangoku and Kyonogagayaki rice, Kyoto's Kyonokoto yeast, and the acclaimed Fushimizu spring water. A seasonal and limited-edition brew, it is medium in body, beautifully structured, and richly flavored.
