Located on the southern slopes of volcanic Lake Bolsena in the province of Lazio, northwest of Rome, Il Vinco is the joint project of three childhood friends, Daniele Manoni, Marco Fucini, and Nicola Brenciaglia. They joined forces in 2014 with the stated aim of recovering and restoring the Canaiolo Nero grape, which is indigenous to their region. With the assistance of another native of Lazio, Andrea Occhipinti, who allowed them use of his cellar, the friends began by purchasing six acres of old-vine Canaiolo, with another six just planted. They now also work with other local grapes, including Procanico, Rossetto, and Malvasia Bianca, from which they make an unofficial version of Est! Est!! Est!!! with spontaneous fermentation and no fining or filtering. “Forestico” is a dry Moscato with just a bit of Procanico blended in, from vineyards on the shores of Lake Bolsena; it is an orange wine but with only two days of skin contact, giving the wine just a hint of tannin; it shows typical Moscato notes of tropical fruits and dried flowers, with the added touch of minerality from the volcanic soil.
