Coquus is a tiny project in Itata, Chile, started by one-time chef Adrian Parada Arrau. Arrau built a stellar reputation at the restaurant he founded in Concepcion ("coquus" is Latin for chef), numbering among his fans the world-renowned terroir expert and Chilean wine guru Pedro Parra. That relationship led to the next steps, working a harvest with Parra, then taking the plunge, making his own wine beginning in 2019. This Cinsault, sourced from a small (roughly one acre) plot of 46-year old vines in Itata that he dry-farms organically, is a bright, energetic red with aromas and flavors of cranberries, blood oranges, and mint.
