This classic dry sake is made by the Aoki Brewery in the Niigata region of Japan. It takes its name from the legendary Yuki Otoko, the bigfoot or yeti of Niigata said to haunt its mountains and occasionally help travelers through the mountainous trails. It is made with Miyama Nishiki rice milled to 60%, and the water is soft, from an underground current originating at Mt. Mikihata. Smooth and drinkable without a lot of flash and fanfare, this is an excellent introduction to classic Niigata sake.
